It just dawned me this morning... I really enjoy "Sir Purrs brew for the game" and while I am not that creative, I thought of something that I CAN contribute as a subject matter expert. Recipes. I have 40 years experience and a reputation of excellence for my cooking and baking. I love to share and sometimes feel like the dumb girl with the football questions, however everyone's response is usually very kind. I truly appreciate that. I would like to contribute back to you all. So maybe this will give you an idea for something different for your game day spread or if you have a recipe request/question, ask away!
In honor of our game tomorrow against the Saints, how about Deviled eggs!
6 hard-cooked eggs, peeled and cut lengthwise
2 heaping teaspoons Mayonnaise or Salad Dressing
Small dollop spicy brown mustard (about the size of a pencil eraser)
2 Teaspoons Sweet pickle relish
1/8 teaspoon salt
1/8 teaspoon ground black pepper
Paprika for garnish
Prepare eggs - Place in pot and cover with cold water. Add about a tablespoon of oil to the water. Cover and bring to a boil. As soon as eggs start boiling, turn off stove and set timer for 14 minutes (Do NOT open lid). After 14 minutes, remove from stove, pour off water and add fresh cold water and ice cubes. Allow to sit in ice water for at least 10 minutes. Drain and peel eggs and cut lengthwise.
Pop out (remove) the egg yolks to a small bowl and mash with a fork. Add mayonnaise, mustard, relish, salt and pepper and mix thoroughly. Taste - add additional mayo if not the right consistency. Fill the empty egg white shells with the mixture and sprinkle lightly with paprika. Place in covered container and refrigerate for a couple hours before serving.
** A secret ** cook 7 eggs instead of 6. For the extra egg, just use the egg yolk and either eat the white or throw it away. The 7 egg yolks will allow you to fill your eggs a little fuller! Very lightly sprinkle salt and pepper on egg shells before filling also adds flavor.
